WRAPS: Either grill some breasts up or buy some pre-cooked, additive-free store-bought breast meat. Slice finely and fill some wholemeal wraps with the chicken, peppers, kidney beans, lettuce, tomato and avocado.
SEASONED GRILLED CHICKEN: Gently beat some chicken breasts flat using a meat mallet or your fist. Coat breasts in sea salt, lemon zest and juice, dried rosemary and thyme, garlic powder and a drop of olive oil. Get a griddle pan or BBQ smoking hot and grill for 2-3mins each side. Leave to rest for 5 mins. Serve with a side salad of rocket, red onion, olives, tomatoes and some basmati rice.
QUICK CHICKEN KEBABS: Chop some breasts into large cubes and in a bowl coat with greek yoghurt, crushed garlic, chilli powder, lime zest and juice, sea salt, and smoked paprika. Thread onto a skewer along with red peppers, onions and tomatoes. Grill or BBQ, turning regularly. Serve with large pittas or rice.
