3 ways to use walnuts

AS PART OF A WELL ROUNDED SNACK: Often we don’t need to create elaborate meals and recipes, we can just group whole foods together to create rounded snacks or meals. For example, have a serving of protein powder mixed with water or milk along with a closed handful of walnuts and an apple as a mid-morning or afternoon snack. Protein (shake) – Fats (nuts) – Carbs/fibre (apple).

ADD TO SALADS: Try this one… Add a couple of handfuls of rocket leaves to a large salad bowl. Make a dressing using some extra virgin olive oil, apple cider vinegar, raw honey, black pepper, sea salt, and dijon mustard. Core and slice up a couple of apples and add to the salad along with a handful of dried cranberries and walnuts. Dress the salad with the dressing and then toss to combine. Serve with grilled chicken on the bone.

AS A TOPPING FOR BANANA PANCAKES: Throw 1 banana, 2-3 eggs, ½ cup of oats, some cinnamon and nutmeg into a blender and blitz to make a pancake batter. Meanwhile, heat a non-stick frypan over medium heat. Spray with a little olive oil and then gently pour in batter to make small American style pancakes. Fry for 1-2 mins each side in batches of 4-6. Stack ’em and serve topped with skyr style yoghurt, fresh berries, walnuts and raw honey or maple syrup.
