MAKE GUACAMOLE: Mash a couple of avocados in a bowl using the back of a fork. Squeeze in some lime juice and add a good pinch of sea salt. Crush a small clove of garlic and stir through. Finely chop red onion and some fresh coriander and fold through the avocado mixture. Serve with tortilla chips and cheese or greek yoghurt.
SLICED AVO ON TOAST: Toast some sourdough, slice your avocado and layer over the toast. Season with a little sea salt and some chilli flakes. Serve as part of a healthy fry up with bacon, grilled tomato, mushrooms, fried eggs and good quality sausage. Alternatively, have it as a snack alone or with scrambled eggs.
MAKE A SALAD: This easy green salad goes great with new potatoes and salmon. Blanch some green peas by boiling them, draining and dunking them straight into ice-cold water to stop the cooking process immediately. This keeps them firm and green. Drain the peas again and add to a salad bowl with a couple of handfuls of rocket. Make a dressing by combing EVOO, chives, lemon juice, raw honey, sea salt, and dijon mustard. Toss through the salad and serve.
