3 ways to use apples

APPLE SLICES WITH NUT BUTTER: Core and slice an apple into wedges or ¼’s and spread with almond or peanut butter for a filling snack. 

MAKE STEWED APPLE: Peel, core and chop 5-6 good-sized apples and add them to a large pan along with some brown sugar, lemon zest, cinnamon, nutmeg and a couple of glugs of boiling water. Get the pan hot, then cover and reduce to low heat. Leave for 30-45 mins and allow to simmer. Use as a topping for yoghurt and oats or as a side with grilled pork or chicken. Keeps well refrigerated in an airtight container for 5-6 days.

MAKE APPLE SLAW: Use a mandolin to shred some carrots and red cabbage, add them to a bowl. Finely chop some spring onions and toss them in along with a handful of dried cranberries and raisins. Shred a couple of apples using the mandolin again and add to the bowl. Make a dressing with some mayonnaise, bbq sauce, lemon juice, salt, apple cider vinegar, and sriracha. Pour over the slaw and toss to combine. Works great with chicken roasted on the bone, pulled pork or pork chops.
